Preheat oven to 350. Prepare a 13"x 9" pan with cooking spray; set aside. In a small bowl, combine walnuts, sugar, and cinnamon; set aside. In a mixing bowl, combine cake mix, pudding mix, egg whites, sour cream, orange juice, oil, and vanilla extract. Mix well. Fold in enough green food coloring to desired shade of green. Spread batter into prepared pan. Sprinkle reserved walnut mixture evenly over top. Bake for 35 minutes, or until lightly browned around the edges. Cool completely.
