Preheat oven to 350. Prepare a 9"x13" pan with cooking spray; set aside. In a large saucepan cook chicken, onions, and carrots until chicken is no longer pink. Stir in salt, pizza seasoning, black pepper, and cayenne pepper. Mix well and bring to a boil. Cool. In a mixing bowl, combine chicken mixture, half the mozzarella cheese, egg, and one tablespoon parmesan cheese. Spread two tablespoons chicken mixture onto each noodle. Gently roll up noodles and place seam side down into prepared pan. Pour spaghetti sauce over top noodles in dish. Sprinkle remaining cheeses evenly over top. Bake, covered for 40 minutes, or until heated through.
