Honey Nut Banana Muffins

Adapted from Cheerios Cookbook

  • Topping:
  • 1 oz honey nut toasted oats cereal, crushed fine
  • 2 tsps unbleached flour
  • 2 tsps light brown sugar, packed
  • Batter:
  • 7 5/8 ozs banana nut muffix mix
  • 1 oz honey nut toasted oats cereal, crushed fine
  • 1/2 cup fat-free milk
  • 1 tbsp olive oil
  • 1 whole egg
Honey Nut Banana Muffins
Preheat oven to 400. Prepare six standard muffin cups with cooking spray; set aside. To prepare topping, combine one ounce cereal, flour, and light brown sugar. Mix until crumbly and set aside. To prepare batter, combine muffin mix, remaining cereal, milk, oil, and egg in a mixing bowl. Mix until all is moistened. Fill each muffin cup to the top with batter. Sprinkle with topping mixture. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
