honey

1/4 cup
refrigerated orange juice

orange peel, grated
Preheat oven to 350. Prepare a 8"x8" pan with cooking spray; set aside. In a mixing bowl, combine honey, oil, 1/4 cup orange juice and eggs. Mix well. In a mixing bowl, combine flour, baking powder, pumpkin pie spice, and baking soda. Mix well. Add to wet ingredients. Mix until all is moistened. Pour batter into prepared pan. Bake for 25 minutes, or until toothpick inserted in center comes out clean. Meanwhile, to prepare syrup, combine remaining honey, remaining orange juice, and orange peel in a small saucepan. Bring to a boil and mix well. Pour hot syrup over warm cake from oven. Cool and cut into squares.
