Kolacky

Adapted from Family Member

  • Pastry:
  • 1 lb butter, softened
  • 1 lb cream cheese, softened
  • 4 cups unbleached flour
  • Cream Cheese Filling:
  • 8 ozs fat-free cream cheese, softened
  • 1 tbsp butter, softened
  • 1/2 cup granulated sugar
  • 1 tsp lemon juice
  • Or use 15 ozs pie filling of your choice.
Kolacky
Preheat oven to 400. To prepare pastry, combine flour, one pound of cream cheese, and one pound of butter in a mixing bowl. Beat until thoroughly combined. Cover and chill overnight, or until easy to handle. Let the dough thaw before rolling. Roll each dough 1/8" thick on a floured surface and cut into 2" x 2" squares using a scalloped pastry wheel. To prepare Cream Cheese Filling, combine the remaining cream cheese, one tablespoon of butter, sugar, and lemon juice in a mixing bowl. Mix well. Add about a teaspoon of filling in the center of each square. Fold opposite corners to the center with one overlapping the other. Moisten the corners to help them stick together. Lightly brush with water and sprinkle with additional sugar. Place 1" apart onto unprepared baking sheets. Bake for 12 to 15 minutes or until lightly browned.
