Lazy Lasagna

Adapted from Great American Brand Name Recipes Cookbook

  • 1 lb ground chicken breast
  • 1/2 cup onions, chopped
  • 1/2 cup bell peppers, chopped
  • 26 ozs low-fat spaghetti sauce
  • 16 ozs fat-free cottage cheese
  • 8 ozs light sour cream
  • 8 pcs lasagna noodles, uncooked
  • 12 slices fat-free mozzarella cheese singles
  • 1/2 cup parmesan cheese
  • 1 cup water
Preheat oven to 350. Prepare a 13" x 9" pan with cooking spray; set aside. In a skillet, cook chicken, onions, and bell peppers until no pink remains in chicken. Add spaghetti sauce. Reduce heat to low. Heat through, stirring occasionally; set aside. In a small bowl, combine cottage cheese and sour cream. Mix well. Spread one and half cups chicken sauce in bottom of prepared pan. Place half uncooked noodles over sauce, then half of cottage cheese mixture, four slices of cheese, half of the remaining sauce, and 1/4 cup parmesan cheese. Repeat layers starting with noodles. Top with remaining cheese slices. Pour water around sides of pan. Cover tightly with foil. Bake for one hour. Uncover and bake again for twenty minutes. Let stand 15 minutes before serving.
