Mexican Style Bow Ties

Adapted from National Pasta Association

  • 8 ozs bow tie pasta, cooked and drained
  • 1/2 tsp olive oil
  • 1 lb ground chicken breast
  • 7 ozs frozen corn, thawed
  • 1/2 cup onions, chopped
  • 15 ozs canned dark red kidney beans, drained and rinsed
  • 8 ozs tomato sauce
  • 1 tbsp chili powder
  • 1 1/4 tsps salt
  • 3 ozs cheddar cheese, shredded
  • 4 ozs fat-free plain yogurt
  • 4 ozs taco sauce
Mexican Style Bow Ties
In a skillet, heat oil over medium heat. Cook chicken, corn, and onions until the chicken is no longer pink. Add kidney beans, tomato sauce, and chili powder; heat through. Cool. In a mixing bowl, combine cooked pasta, chicken mixture, and salt; set aside. In another bowl, combine cheese, yogurt, and taco sauce. Add to chicken mixture and toss well until well coated. This can be served warm or cold.
