Microwave Tacos

Adapted from Step By Step Microwave Cooking

  • 1 lb ground chicken breast
  • 1/4 cup water
  • 1 1/4 ozs taco seasoning mix
  • 8 whole taco shells
  • 4 ozs cheddar cheese, shredded
  • 4 ozs iceberg lettuce, shredded
Place chicken in a glass medium bowl. Microwave on high for four minutes, or until chicken is no longer pink. Stir in water and taco seasoning. Mix well. Cover and microwave on high for two minutes or until heated through. Spoon into taco shells. Top each shell with cheese and lettuce.
