Preheat oven to 400. Prepare 12 standard muffin cups with cooking spray; set aside. In a small bowl, combine cream cheese and brown sugar. Mix well and set aside. In another small bowl, combine cereal and buttermilk. Let stand 15 minutes. Meanwhile, in a mixing bowl, combine flour, sugar, cinnamon, baking powder, baking soda, salt, ginger, nutmeg, pumpkin, egg, and oil. Mix until all is moistened. Stir in cereal mixture and baking bits. Fill each muffin cup 1/2 full with batter. Spoon one teaspoon cream cheese mixture onto center of each muffin. Top with one tablespoon batter to cover cream cheese. Bake for 20 minutes, or until toothpick inserted in center comes out clean.
