Spam Western Pasta

Adapted from The Great Taste of Spam

  • 12 ozs Lone Star pasta, cooked
  • 6 ozs Spam Lite luncheon meat, cubed
  • 1 c low-fat cheddar cheese, shredded
  • 1 c carrots, sliced
  • 3/4 c celery, chopped
  • 1/2 c bell peppers, chopped
  • 1/2 c onions, chopped
  • 1/2 c light mayonnaise
  • 2 tbsps dijon mustard
  • 1 tbsp barbecue sauce
In a mixing bowl, combine cooked macaroni, luncheon meat, cheese, carrots, celery, bell peppers, and onions; set aside. In a small bowl, combine mayonnaise, mustard, and barbecue sauce. Mix well. Toss with pasta mixture. Cover and chill several hours before serving.
