baking potatoes, cooked and cut into cubes

1/2 cup
onions, chopped

1/2 tsp
salt

4 whole
hard-boiled eggs, cooked and chopped

1 cup
light mayonnaise

1/2 cup
dill pickle relish

1/4 cup
yellow mustard

1 tbsp
cajun seasoning
Chill potatoes after cooking. In a mixing bowl, combine chilled potatoes, onions, salt, eggs, mayonnaise, relish, mustard, and cajun seasoning. Mix lightly until all is coated. Chill for several hours before serving.
