pumpkin pie mix

fat-free evaporated milk

cornstarch

plain French bread, cut into slices

pure vanilla extract
In a blender, combine eggs, pumpkin pie mix, evaporated milk, cornstarch, pumpkin pie spice and vanilla extract. Process until smooth. Prepare a 2-quart casserole dish with cooking spray; set aside. Dip bread slices in egg mixture. Arrange bread slices into prepared dish. Any remaining egg liquid needs to be poured evenly over top. Preheat oven to 350. Bake covered, for 20 minutes, and bake uncovered again for 20 minutes.
