Spicy French Toast

Adapted from Libby's Favorite Pumpkin Recipes

  • 5 whole eggs, slightly beaten
  • 10 ozs pumpkin pie mix
  • 1/4 cup fat-free evaporated milk
  • 1 tbsp cornstarch
  • 1/2 tsp pumpkin pie spice
  • 14 ozs plain French bread, cut into slices
  • 1 tsp pure vanilla extract
Spicy French Toast
In a blender, combine eggs, pumpkin pie mix, evaporated milk, cornstarch, pumpkin pie spice and vanilla extract. Process until smooth. Prepare a 2-quart casserole dish with cooking spray; set aside. Dip bread slices in egg mixture. Arrange bread slices into prepared dish. Any remaining egg liquid needs to be poured evenly over top. Preheat oven to 350. Bake covered, for 20 minutes, and bake uncovered again for 20 minutes.
