fresh strawberries, chopped, 7 whole strawberries
Preheat oven 350. Prepare a 9" x 5" loaf pan with cooking spray; set aside. In a mixing bowl, combine bananas, buttermilk, oil, eggs, and vanilla extract. Mix well. In another mixing bowl, combine flour, sugar, baking soda, and salt. Add to wet ingredients and mix until combined. Fold in strawberries. Pour batter into prepared pan. Bake for one hour and 15 minutes, or until toothpick inserted comes out clean. Cover top loosely with foil, if top browns too quickly.
