Crust:

1 1/2 cups
low-fat graham cracker crumbs

1/4 cup
light margarine, softened

granulated sugar

Filling:

8 ozs
fat-free cream cheese, softened

14 ozs
fat-free sweetened condensed milk

2/3 cup
frozen strawberry daiquiri

1/2 tsp
rum extract

4 drops
red food coloring

1 cup
Cool Whip Free, thawed
To prepare crust, combine crumbs, margarine, and sugar in a mixing bowl. Press mixture firmly in a 9" pie pan. Chill one hour, or until firm. Or, bake in a 350 oven for ten minutes or until lightly browned. Cool on rack before filling. To prepare filling, combine cream cheese, sweetened condensed milk, daiquiri mix, rum extract, and red food coloring in a mixing bowl. Mix well. Fold in whipped topping. Pour into crust. Chill or freeze four hours or until firm. Garnish with fresh strawberries.
