low fat sweetened condensed milk

lemon juice

lemon peel, grated

low-fat graham cracker crumbs

light brown sugar, packed

margarine, melted
In a mixing bowl, combine sweetened condensed milk, lemon juice, and lemon peel. Mix well and set aside. In a 2-quart round glass dish, combine graham cracker crumbs, brown sugar, and margarine. Mix until crumbly. Firmly press 2/3 cup mixture into dish. Set aside remaining crumb mixture.Spread lemon mixture even over top crumb mixture in dish. Sprinkle top evenly with reserved crumb mixture. Microwave on 50% power for three minutes, or until center is set. Refrigerate before serving.
