Turkey and Barley Stew

Adapted from ConAgra Foods, Inc.

  • 3 1/2 cups low sodium chicken broth
  • 14 1/2 ozs canned Italian style tomatoes, undrained
  • 6 ozs tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 16 ozs turkey light meat, skinless, cooked and cubed
  • 12 ozs frozen mixed vegetables, thawed
  • 1 cup barley
  • 1/2 tsp granulated sugar
Turkey and Barley Stew
In a 5 - quart slow cooker, combine chicken broth, tomatoes, tomato paste, Italian seasoning, salt, turkey, mixed vegetables, barley, and sugar. Mix well. Cover and cook on high for seven hours, or until barley is cooked.
