Turkey Cottage Pie

Adapted from Quick Fixes from Brand Name Mixes

  • 3 tbsps butter
  • 3 tbsps unbleached flour
  • 1.25 ozs onion soup mix, 1 envelope
  • 2 c water
  • 10 ozs frozen mixed vegetables, thawed
  • 8 ozs turkey light meat, skinless, cooked and cubed
  • 1/8 tsp black pepper
  • 24 ozs frozen mashed potatoes, prepared
Preheat oven to 375. Prepare a 2-quart casserole dish with cooking spray; set aside. In a large saucepan, melt butter. Stir in flour. Cook for five minutes, stirring often. In a small bowl, combine soup mix and water. Add to flour mixture. Bring mixture to a boil and simmer for 15 minutes, or until thick and bubbly. Add vegetables, turkey, and black pepper. Mix well. Place mixture into prepared dish. Top with mashed potatoes. Bake for 30 minutes, or until heated through.
