Turkey Tortellini Soup

Adapted from Butterball, LLC

  • 2 tbsps chicken broth
  • 1 cup onions, chopped
  • 1 whole carrot, sliced thin
  • 28 ozs low sodium chicken broth
  • 28 ozs canned Italian style tomatoes, undrained
  • 1/2 tbsp basil
  • 1 tsp salt
  • 1 tsp pizza seasoning
  • 1 tsp granulated sugar
  • 1/8 tsp black pepper
  • 8 ozs turkey light meat, skinless, cooked and chopped
  • 8 ozs frozen cheese tortellini, cooked
Turkey Tortellini Soup
In a large skillet, heat chicken broth. Add onions and carrots for seven minutes, or until vegetables are tender. Add remaining broth, tomatoes, basil, salt, pizza seasoning, sugar, and pepper. Mix well and bring to a boil on medium-high heat, stirring occasionally. Reduce heat to medium. Simmer covered 10 minutes. Add turkey and tortellini. Cook until heated through.
