chicken breast halves skinless, cut into 1"pieces

onions, chopped

frozen spinach, thawed and drained

egg noodles, cooked

reduced fat Swiss cheese, shredded

fat-free evaporated milk

light sour cream

Preheat oven to 350. Prepare a 9" x 13" pan with cooking spray; set aside. In a large pan, cook chicken and onions until chicken is no longer pink. Add spinach and noodles. Keep mixture warm. In a shallow bowl, whisk together half the cheese, evaporated milk, sour cream, eggs, and salt. Mix well. Stir cheese mixture into chicken mixture. Mix well. Spread evenly into prepared pan. Sprinkle remaining cheese over top. Bake, covered, for 35 minutes, or or until heated through.
