powdered sugar

margarine, softened

pure vanilla extract

peppermint extract

Icing:

white chocolate chips

1/2 cup
peppermint candies, crushed fine
In a mixing bowl, combine sugar and margarine until smooth. Add, egg, vanilla extract, and peppermint extract; set aside. In a separate mixing bowl, combine flour, baking soda, and cream of tartar. Add to wet ingredients and mix until all is moistened. Chill dough two hours, or until firm. Preheat oven to 350. Shape dough into 36 one inch balls. Place onto prepared baking sheets. Bake for 10 minutes or until lightly browned on bottoms. Cool. Meanwhile, to prepare icing, melt chocolate chips until smooth. Dip half of each cookie into melted chips, allowing excess to run off. Place on waxed paper lined trays. Sprinkle each cookie with crushed peppermint candies. Chill for 10 minutes, or until chocolate is firm.
